Classic Beef Stroganoff

How to Prepare:

Classic Beef Stroganoff begins with quality scotch fillet steak, cut into thin strips. Start by flattening the steaks to about 3/4 cm thick for tender results. Season the beef with salt and pepper. In a large skillet, heat 1 tablespoon of vegetable oil over high heat. Sear half the beef quickly for 30 seconds on each side until browned, then transfer to a plate. Repeat the process with the remaining beef.

Next, lower the heat to medium-high and add butter, letting it melt. Sauté sliced onions for one minute before adding mushrooms. Cook the mushrooms until they turn golden, scraping up any flavorful bits stuck to the skillet. Stir in flour, cooking for another minute to form a roux. Gradually add beef broth while stirring, followed by Dijon mustard and sour cream. Simmer until the sauce thickens.

Lastly, return the beef and any juices to the skillet, heating through without overcooking. Serve your Classic Beef Stroganoff over pasta or egg noodles, garnished with chives if desired. For more hearty beef dishes, check out these hearty recipes that are sure to delight!

Cooking Tips for Classic Beef Stroganoff:

When preparing your Classic Beef Stroganoff, ensure to choose tender cuts like sirloin or tenderloin for the best results. Slicing the beef thinly against the grain helps in achieving a melt-in-your-mouth texture. Start by quickly searing the beef in a hot skillet to retain its juices.

After removing the beef, sauté onions and mushrooms until they are golden brown, which adds depth to the flavor. Incorporate beef broth and a splash of white wine for a rich sauce. Be cautious not to overcook the sauce; it should thicken gently. For a creamy finish, stir in sour cream off the heat to prevent curdling.

Description

Classic Beef Stroganoff is a rich and creamy dish made with tender beef strips and mushrooms served over pasta, perfect for a comforting meal.

Ingredients

Scale

600 g scotch fillet steak

2 tbsp vegetable oil

1 large onion

300 g mushrooms

40 g butter

2 tbsp flour

2 cups beef broth

1 tbsp Dijon mustard

150 ml sour cream

salt

pepper

250 – 300 g pasta

chopped chives

Instructions

  • Use your fist (or rolling pin or mallet) to flatten the steaks to about 3/4cm / 1/3″ thick. Slice into 5mm / 1/5″ strips (cut long ones in half), discarding excess fat.
  • Sprinkle with a pinch of salt and pepper.
  • Heat 1 tbsp oil in a large skillet over high heat. Scatter half the beef in the skillet, QUICKLY spread it with tongs. Leave untouched for 30 seconds until browned. Turn beef quickly (as best you can!). Leave untouched for 30 seconds to brown. Immediately remove onto a plate. Don’t worry about pink bits and that it will be raw inside.
  • Add remaining 1 tbsp oil and repeat with remaining beef.
  • Turn heat down to medium high. Add butter, melt. Then add onions, cook for 1 minute, then add mushrooms.
  • Cook mushrooms until golden. Scrape bottom of fry pan to get all the golden bits off (this is flavour!).
  • Add flour, cook, stirring, for 1 minute.
  • Add half the broth while stirring. Once incorporated, add remaining broth.
  • Stir, then add sour cream and mustard. Stir until incorporated (don’t worry if it looks split, sour cream will “melt” as it heats).
  • Bring to simmer, then reduce heat to medium low. Once it thickens to the consistency of pouring cream (3 – 5 minutes), adjust salt and pepper to taste.
  • Add beef back in (including plate juices). Simmer for 1 minute, then remove from stove immediately.
  • Serve over pasta or egg noodles, sprinkled with chives if desired.

Notes

Best cuts of beef include boneless rib eye or sirloin. Suitable for freezing, just reheat carefully.
