How to Prepare:

To make the perfect Classic Macaroni Salad, begin by boiling a large pot of water with 1.5 tablespoons of salt. Add 250g of elbow macaroni and cook according to the package directions. Once the pasta is tender, drain it thoroughly and allow it to cool. While the macaroni cools, prepare the dressing by mixing ½ cup mayonnaise, ½ cup yogurt or sour cream, 1 tablespoon cider vinegar, 2 teaspoons Dijon mustard, and 2 teaspoons sugar in a bowl. Incorporate ¾ teaspoon garlic powder, 1¼ teaspoons salt, and ½ teaspoon pepper for added flavor.

In a large mixing bowl, combine the cooled pasta with finely sliced celery, red bell pepper, green onions, and grated carrot. Pour the dressing over the pasta mixture and toss everything until well combined. Adjust the seasoning to suit your taste—whether you desire more salt, sweetness, or tanginess. For the best flavor, let the salad sit for at least 20 minutes before serving it at room temperature. Description

This Classic Macaroni Salad is a creamy, tangy dish filled with crunchy vegetables, perfect for summer picnics or family gatherings.

Ingredients

Scale

250 g / 1/2 lb macaroni elbow pasta

1 1/2 tbsp salt

1 cup celery

finely sliced

3/4 cup red capsicum / bell peppers

finely diced

3/4 cup green onions

finely sliced

1 medium carrot

grated

1/2 cup mayonnaise

1/2 cup yoghurt or sour cream

1 tbsp cider vinegar

2 tsp Dijon mustard

2 tsp sugar

3/4 tsp garlic powder

1 1/4 tsp salt

1/2 tsp pepper

Instructions

  • Bring large pot of water to the boil – 4 to 5 litres / quarts. Add salt then add pasta. Cook per packet directions.
  • Drain pasta then cool.
  • Meanwhile, mix Dressing ingredients in a bowl.
  • Place pasta in a bowl. Add remaining Macaroni Salad ingredients. Pour over Dressing.
  • Toss. Adjust salt / sugar / sour (vinegar) / mayo to taste.
  • Set aside for at least 20 minutes. Then serve at room temperature (not cold). It’s great the next day too!

Notes

1. Lots of add-in potential here. Bacon, ham, egg, grated cheese, chicken, olives, diced chillies – go wild! But if this is for a side dish with other strong flavoured mains, I’d urge you to consider sticking with the fairly classic version. 🙂 2. No-Mayo dressing option – use Lemon Yogurt Salad Dressing (it’s really terrific!). 3. Storage – keeps for up to 5 days in the fridge. Can also be frozen – thaw naturally (do not microwave thaw) and toss well before serving.
