How to Prepare Healthy Turkey & Spinach Bake:

Begin by preheating your oven to 350°F. Start cooking the penne pasta according to package directions, but reduce the cooking time by three minutes to achieve a perfect al-dente texture. While the pasta is on the stove, heat olive oil in a large pot. Sauté diced yellow onion and minced garlic until translucent and fragrant. Next, add your cooked turkey along with tomato paste, fresh parsley, sea salt, Italian seasoning, black pepper, and crushed red pepper for a mild kick. Incorporate frozen green peas and pour in the savory chicken or turkey stock along with a cup of the reserved pasta water.

Once all ingredients meld together, fold in the fresh spinach until it wilts. Drain the pasta, mix it with the sauce, and transfer everything to a baking dish. Cover and bake for 20 minutes initially. Afterward, uncover and sprinkle shredded mozzarella and parmesan cheese on top, then bake for an additional 10 minutes.
