How to Prepare High-Protein Veggie Fried Rice:
Start your culinary adventure by preparing the sauce. In a small sealable jar, combine the tamari soy sauce, sesame oil, maple syrup (or honey), and freshly squeezed lime juice. Season with salt and pepper, then shake well to mix. Set aside.
Next, focus on the tofu. Cut the extra-firm tofu into bite-sized cubes. Heat a non-stick pan with a splash of oil, then fry the tofu for about 5 minutes until it achieves a golden crust. Pour in two tablespoons of the sauce, allowing it to caramelize around the tofu, then add sesame seeds for extra crunch.
Now, wipe the pan clean and add a teaspoon of oil, then sauté garlic and ginger for one minute. Add tenderstem broccoli, halved baby corn, and matchstick carrots. Cook for 5-8 minutes until just tender. Incorporate the remaining sauce along with the cooked brown rice, stirring to warm through.
Finally, serve your high-protein veggie fried rice in bowls, topped with crispy tofu, fresh red chili slices, and coriander. Enjoy immediately, or store it in a sealed container for up to 3 days. For more tasty rice recipe ideas, check out Easy Taco Rice Bowl.
